- For the preparation of such cakes, it is best to use whole grain wholemeal flour, or in a proportion of 50/50 of white and whole grain. But if only white is available, you can use it. Pour the flour into a deep bowl.
- Add a little salt and stir. The dough will turn out tastier if you add 1 tbsp. l vegetable oil, but you can do without it.
- Pour boiled water at room temperature into flour in small portions and knead the dough. Do not add a lot at once. Better to pour in some more water than to add more flour. You need to knead the dough until it stops sticking to your hands and dishes. The consistency of the dough will be the same as for dumplings. Next, cover the dough with a plate or cling film so that it does not wind, and leave for 30-45 minutes.
- After the dough has settled, we take a thick-walled pan and put it on a stove to bask. Please note that you need a pan with a thick bottom, because the cake will be baked without oil, and not all modern pans are designed for this. We pluck a small piece from the general lump of dough, and cover the rest again. Sprinkle the surface of the table with flour. The resulting piece of dough is rolled into a ball, and then flattened into a small cake. Bone this cake in flour and roll it out as thin as possible using a rolling pin.
- Next, shake off the excess flour. On a well-heated frying pan without oil, lay out the rolled cake. Literally after 20-30 seconds, pimples will begin to appear on the surface of the cake. From time to time it can be rotated so that it is baked evenly.
- After 2-4 minutes, turn the cake. Golden spots should appear on it. Depending on your preferences, you can change the cooking time of each side, because someone likes more roasted ones, and someone softer. You also need to be prepared for the fact that after the first turning of the cake on the other side, it will begin to inflate. This need not be afraid, this is a normal process. It is only necessary to slightly raise the edge and release excess air.
- If you cook on gas, then you need to set the pan aside, take the tortilla with tongs and put on the fire. She will begin to swell even more. If it is inflated into a ball, it is very good. When the tortilla is fried over a fire, put it on a plate.
- You can grease it with vegetable or butter. Ready cakes are stacked on top of each other. Eat warm. Scones can be dipped in a mixture of vegetable oil and adjika. Enjoy your meal!
