Step cooking
Cooking dough
- Pour 250 ml of milk into the stewpan. Put it on the fire and bring the milk to a boil.
- Remove the stewpan from the heat and add 60 g of butter to it. Stir the mixture until the oil is completely dissolved. The mixture should be cooled to 35 ºС.
- In a deep bowl, sift half the norm of the flour (200 g). It is advisable to use premium flour, it has less gluten, which makes bakery products airy and soft.
- Add 1 tsp. salt and as much sugar.
- Pour 1 tsp. dry or 15 g of fresh yeast. Dry yeast can be combined with dry ingredients. If you use fresh yeast, they must be dissolved in warm milk.
- Pour the cooled milk mixture into a bowl of dry ingredients. Mix thoroughly until the lumps disappear. Add 1 tbsp. l any vegetable oil and mix.
- Sift the flour directly into the bowl in parts. Add flour gradually, do not clog the dough with excess flour. Knead the dough for several minutes. After kneading, it should become soft. The dough should not stick to your hands. Flour from different manufacturers and even crops always has its own properties, so you may need more or less of the specified amount of flour.
- Put the dough back in a bowl, cover it with a lid or towel and place in a warm place to rise for 1 hour. You can put it in the oven by setting the temperature to not more than 50 ºС.
Cooking stuffing
- Grate 500 g of hard cheese on a coarse grater. Measure in a separate container 4-5 tbsp. l cheese for sprinkling cakes.
- In the remaining cheese add 3 tbsp. l sour cream for the plasticity and juiciness of the filling, and mix. Divide the filling into 4 equal parts, forming balls from them.
Cooking cakes
- After the dough has risen, put it on a chopping surface and crush. Cut the dough into 4 equal parts and give each shape to a ball.
- Using a rolling pin, roll each piece of dough into a pancake with a diameter of 20-22 cm.
- Put cheese balls in the center, stick them up, forming round bags of dough. Cut the tops with scissors, flatten the bags with your hand and roll them into flat cakes with a thickness of about 1 cm.
- Cover the baking sheet with parchment and place the cakes on it. Beat 1 egg with a fork and use a brush to apply it to the cakes.
- Sprinkle the tortillas with the cheese set aside for this purpose.
- Preheat the oven to 220 ºС and bake cakes for 15-20 minutes. Finished cakes have ruddy golden color. Enjoy your meal.
