Step cooking
- To begin, clear 3-4 pcs. large potatoes, rinse and cook to make mashed potatoes for filling, slightly salt. Also, rinse 100-150 g of mushrooms (you can take mushrooms or oyster mushrooms), cut them into thin strips, simmer in water, and then fry well in a pan with vegetable oil. When the potatoes are fully softened, mash with a pusher. Then mix the potatoes with mushrooms and let the filling cool slightly.
- Now prepare the dough for the tortillas. Pour 500 ml of kefir into a deep bowl, add 1 tsp. soda and mix well with a whisk.
- Then pour in 2 tablespoons of kefir l vegetable oil and beat one egg. Stir with a whisk. Add salt to taste and, if you want, a little black pepper and a pinch of provence herbs, mix.
- Then sift about 500-550 g of wheat flour into a bowl and knead the dough. First with a spoon, and when the dough thickens a little, knead with your hands. Pour a little sifted flour onto a cutting board, put the dough on top. Sift a little flour on top of the dough and knead until a uniform lump.
- Form a sausage from the dough and divide with a knife into about 8-9 parts. Roll each part in the dough and slightly level with your hands to make cakes. Then, for each cake in the center, lay out the prepared filling, about 2 tsp. with a slide, wrap and pinch the dough, then squeeze the cake and flatten.
- Place a frying pan on the stove and pour about 3-4 tbsp into it. l vegetable oil, heat over high heat. Then reduce the heat to medium and spread the first tortilla to fry until well browned on both sides. So fry all the cakes, and when ready, lay them in a stack on top of each other. Melt about 20 g of butter and grease them with ready-made cakes, this will enhance their taste.
Filling for cakes can be very diverse. You can combine greens with potatoes or cottage cheese, use ham with cheese, stewed cabbage, minced meat. You can also cook tortillas with a sweet filling, using berries with sugar, jam or fruit puree. It all depends on your imagination and taste.
Serve ready-made cakes best of all warm, slightly watering them with sour cream. And depending on the filling, fragrant cakes can be served with first courses instead of bread.
