Step cooking
- Take 450-500 ml of kefir and pour it into a bowl. Kefir should be warm. If you just got it out of the refrigerator before cooking, heat it on the stove or in the microwave.
- In kefir add 1 tsp. soda and mix well with a spoon. There should be a reaction, and kefir will begin to foam and increase in volume.
- Add 1 tsp to the mass. salt and stir. We eat a sieve and sift the flour (500-600 g) into kefir. You need to do this gradually, add a little flour and stir. The dough should be very soft, almost liquid, very sticky to the hands. It is not necessary to stir the dough for a long time, otherwise it will turn out tough. Sift the flour onto the surface of the table or board and spread on top of the dough.
- Sprinkle dough on top with flour and knead a little. The dough should be tender and light.
- Cover the dough with a bowl and leave for 20-30 minutes. After the dough has already stood, divide it into 3-4 parts.
- Sprinkle the dough with flour in the places where they cut it. Each part of the dough needs to be spread out with your hands in a cake to the desired thickness (1-3 cm).
- On a preheated pan, spread the tortilla. Make a small fire (or warm up) and cover with a lid. On each side, fry the cake for 6-7 minutes, covering it with a lid.
- Cooking cakes in turn in a pan. We cover the finished cakes with a towel, so they will retain heat better.
