Step cooking
- Pour 400 milliliters of milk into a deep bowl, add 0.5 teaspoon of salt, 2 eggs and mix well with a whisk.
- Add 325 grams of flour in portions, and mix everything well, the dough should turn out medium density.
- Grate 100 grams of regular and 100 grams of suluguni cheese. Add the grated cheese to the dough and mix well.
- We turn on the gas or electric stove, put a frying pan on it to warm up. When the pan warms up well, grease it with butter.
- We put a small amount of dough into the pan and carefully distribute it in the pan with the help of a spoon.
- Khachapuri must be fried on both sides until golden.
- Ready khachapuri on top must be slightly greased with butter. In this way, fry all the other khachapuri. Lazy khachapuri is ready! Enjoy your meal!
What to serve
Both familiar and lazy khachapuri can be served with chicken stock, fresh herbs, hot Georgian sauces and adjika. For breakfast, it is better to give preference to the broth. To do this, take 300 grams of chicken, remove the remains of entrails and feathers from it, rinse the meat well in cold water. Also, do not forget to remove excess fat from the chicken.
Peel and wash 1 onion and 1 carrot. Carrots can be cut into pieces, or left whole, follow your preferences. Pour 300 grams of chicken with water, bring to a boil and remove the foam. Add 1 carrot, 1 onion, spices, salt to the broth, bring to a boil and reduce the heat a little. Boil the broth for 40-50 minutes with the lid ajar or without it at all.
Most importantly, the broth should not boil too much. That is what its beautiful color and transparency depend on. At the very end of cooking, add a few sprigs of greenery. Optionally, the broth can be filtered.
Cooking Tips
- You can add well-chopped parsley, onion or dill to the cheese mixture if you wish.
- Some housewives mix cheese and cottage cheese in equal proportions.
- If you have a Teflon pan, then you can do without oil, but with it khachapuri is much tastier.
- You can put the dough into the pan not in the form of pancakes, but in the form of pancakes. It will be just as tasty.
- If you don’t like the broth, serve ready-made khachapuri with a cup of milk, tea or coffee.
