Step cooking
- Rinse vegetables thoroughly under warm water. Tomatoes are removed from the peel (optional) and chopped in a meat grinder or blender to obtain a pasty consistency. If the kitchen has a juicer - this is a huge plus. You can even leave them in their skins and pass them through a juicer. We need only thick squeezed juice.
- Bell pepper must be cleaned from seeds. It is better to do this by cutting each pepper in half and gently removing the core with seeds with your fingers. Next, grind the pepper. Each half is cut again in half lengthwise and then cut into strips (approximately 0.5-1 cm wide, no more).
- We turn on the multicooker and select the “frying” mode. After all, we need the highest possible temperature. Pour 4 tbsp to the bottom of the bowl. l granulated sugar (without slide), 2/3 Art. l salt (it is better to use pickling, but in no case iodized) and pour there ½ cup of vegetable oil.
- We send there a thick tomato juice (or tomatoes chopped on a grater). Mix everything and let this mass boil. Then we wait another 5 minutes.
- While the tomatoes are boiling, it is necessary to stir them periodically so that the mass warms up evenly. After 5 minutes, pour the chopped pepper into the slow cooker. Stew it for another 10 minutes.
- While the pepper is stewed, also stir it. And at this time it is already possible to prepare banks, that is, to sterilize them.
- Add to the lecho 7 tbsp. l vinegar and leave it to boil for another 2 minutes. We turn off the lecho and in a hot state we lay it out on the banks and roll them up.
If desired, you can add a little ground pepper or onions to the lecho. In this case, it should be about 750 grams. Onions must be chopped in the same way as bell peppers and put in a slow cooker along with tomatoes. In addition, you can diversify the recipe by adding dried herbs or other spices. But even without them, this dish has an incredibly rich taste and in winter can completely replace the need for fresh bell peppers and tomatoes. And rest assured, both adults and younger family members will appreciate it.
