Step cooking
You can cook lecho at home according to a step-by-step recipe with a photo:
- I wash all the vegetables well under running water and clean them. Cut sweet pepper lengthwise and peel the testes and the stalk. Cut the onions, carrots, parsley root into large pieces.
- We chop the tomatoes and place them in the bowl of the food processor.
- We chop finely bitter pepper and put in a blender bowl.
- Grind tomatoes with a combine until smooth. We put a frying pan on the fire, pour vegetable oil. We spread onions, carrots and parsley. Passing, stirring occasionally. At the same time, pour the tomato puree into the pan and set the tomato sauce on the fire.
- When the vegetables become soft, grind them in the bowl of the combine to a puree state.
- Combine the ground vegetables with boiling tomatoes and continue to cook over medium heat to reduce the amount of liquid.
- Cut one tomato and add to the blender bowl to the hot pepper. This is done so that the pepper grinds better.
- Ground pepper is also added to the tomato sauce.
- Sweet pepper cut into small pieces.
- Put chopped pepper in boiling tomato sauce and mix.
- Add salt and sugar. Mix and cook for 15 minutes.
- Before cooking, add vinegar, mix well.
- We lay out the lecho on clean and dry banks. Cover with lids.
- Ready cans with lecho are placed in a pan or tank for sterilization and pour warm water. We put the tank on fire, cover it with a lid. From the moment of boiling, sterilize for 20-25 minutes.
- After that, we screw the lids on the banks. And the banks themselves with lecho are turned upside down and covered with a blanket.
- After a day, cans can be transferred to the pantry for storage.
Cooking options
Each hostess has her own option of preparing lecho for the winter. Consider what other ingredients are usually added to such a dish:
- eggplant;
- spices: black and allspice, bay leaf, cloves, etc .;
- garlic;
- sunflower oil;
- tomato paste;
