Step cooking
- First prepare the pepper. First of all, wash 3 kg of sweet pepper. We remove the stalk and seeds.
- Cut the pepper into pieces and cut into strips of 5-8 mm and put in a bowl. Or, to your liking, you can cut as you like.
- Wash the tomatoes (2 kg), drain and cut into pieces, simultaneously cutting out all the excess.
- We twist them in a meat grinder into a bowl. Tomatoes can also be mashed using a blender or food processor. To make the mashed potatoes more homogeneous, it is advisable to first peel the tomatoes. To do this, wash the washed, but not cut tomatoes, with a knife crosswise. Meanwhile, in a teapot or pan, bring the water to a boil and pour tomatoes on it. Leave the tomatoes in boiling water for about one minute. After that we transfer them to a bowl with very cold water (you can add pieces of ice to it). After such temperature changes, the skin can be easily removed by slightly prying it with a knife.
- We pour the rolled tomatoes into a bowl or pan, in which we will cook lecho, pour 200 ml of refined sunflower oil here, add 180 g of granulated sugar and 2 tbsp. l (no slide). Salt should be taken not iodinated and not extras. We put the basin on the stove on a small fire. After boiling, cook for 10 minutes, stirring occasionally.
- After this time, add pepper to the bowl. Mix again. We cover the basin with a lid and cook for 20 minutes from the moment of boiling, continuing to stir occasionally.
- 3 minutes before cooking, add 9% vinegar (2 tbsp. L.) To the bowl with lecho. Stir the lecho again and wait until it boils. Pour the finished lecho into sterile jars. At the same time, the lecho remaining in the pelvis should boil slightly. Cover the pepper with tomato juice.
- Banks with a lecho immediately after application are hermetically sealed with sterilized lids, turned upside down and wrapped for 12 hours. From the specified number of ingredients, 7 cans of 720 ml and one can of 390 ml are obtained. This lecho can be stored at home at room temperature.
How to sterilize jars
- We will prepare banks and lids for rolling up. The jars must be sterilized, and the lids must be boiled. Before sterilization, you need to check the neck of the jars so that they are intact, not torn, and the lids are not bent. Then you need to wash the cans with the addition of soda and rinse well. There are several methods for sterilizing cans. So that you can choose for yourself more acceptable.
- The first way is steam sterilization. To do this, pour water into the pan, bring it to a boil and put the jar turned upside down on the wire rack. It is better to take a larger pan, and the wire rack from the oven. Then you can sterilize several cans at once. Meanwhile, you can boil the lids in the pan. When large drops appear inside the can, it can be removed. Before laying in her lecho, it must dry.
- The second way is sterilization in the oven. It is very convenient, because many cans can be sterilized at once.To do this, the jars that are wet after washing are put upside down in the cold oven. Lids are also placed nearby. The oven temperature is set to 120 degrees. After 15 minutes, turn off the oven.
- The third way is microwave sterilization. With this method, water is necessarily poured into the jars 1.5 cm from the bottom, otherwise the jars may burst. Power is set at 800-900 watts. After 3 minutes, the cans can be removed.
