Step cooking
- Wash, peel and cut into medium pieces 2.5 kilograms of sweet bell pepper. Do not forget to rinse the vegetables from the inside to get rid of all the seeds.
- I thoroughly wash two kilograms of fresh tomato and make a cruciform incision on each vegetable. Pour boiling water over all the tomatoes and peel them.
- We interrupt all the tomatoes in a blender.
- Pour the resulting juice into a saucepan, put on the stove and bring to a boil. When the juice boils, remove the foam and cook for another 20 minutes.
- Add 30 grams of salt, 200 grams of granulated sugar and 150-200 grams of vegetable oil. The more oil, the fatter the finished dish will be. Therefore, the amount of this ingredient can be controlled at your discretion.
- Stir the tomato juice, wait until it boils and put the chopped bell pepper in the pan. Add two grams of peppercorns to the pan.
- We clean, wash and cut into half rings 500 grams of onion. Place the onion in a pan with the rest of the ingredients. Mix everything well, bring to a boil and cook for another 15 minutes over low heat.
- Peel three cloves of garlic and finely chop. When 15 minutes have passed, add chopped garlic and 45 grams of 9% vinegar to the lecho.
- Thoroughly wash and sterilize half-liter jars. Be sure to boil the lids for seaming. When the lecho is ready, pour it into sterilized jars, cover with lids and roll it with a special key.
- Turn all the cans upside down, wrap with towels and leave to cool completely.
- Store lecho in the refrigerator or at room temperature.
