Kitchen appliances and utensils:
- plate;
- meat grinder;
- kitchen scales;
- a bowl;
- cauldron;
- cutting board;
- knife;
- spoon;
- 500 ml glass jars (8 pcs.);
- lids for canning (8 pcs);
- sealing key;
- a warm towel.
Ingredients
Name | amount |
Tomatoes | 2 kg |
Cucumbers | 2.5 kg |
Bow | 500 g |
Bell pepper | 900 g |
Garlic | 2 heads |
Vegetable little | 150 ml |
Vinegar 9% | 60 ml |
Sugar | 180 g |
Salt | 70 g |
Step cooking
- Wash and finely chop 2 kg of red tomatoes and 900 g of bell pepper of any color. Peel 2 large heads of garlic.
- Pass chopped tomatoes with pepper and garlic through a minced meat grinder. Pour the resulting mass into the cauldron.
- In a cauldron, add 150 g of vegetable oil, 180 g of sugar and 70 g of salt and mix thoroughly. Put the cauldron on the fire and bring the ground vegetables to a boil.
- While the vegetables are boiling, wash and cut 2.5 kg of fresh cucumbers. If the cucumbers are small, cut them into circles, and if large, then in half rings (about 3 mm thick).
- Peel 500 g of onion and chop it into thin half rings.
- Grind the tomatoes and pepper after boiling for another 10 minutes, and then add the chopped onions and cucumbers, mix well.
- Bring the vegetables to a boil and cook for another 6 minutes. After the vegetables have boiled the indicated amount of time, add 60 ml of 9% vinegar to the cauldron and mix. Cook one more minute. Sterilize 8 cans of 500 ml each (or take a convenient can size for you and distribute it lecho). Boil 8 canning lids.
- Fill each jar lecho to the brim. Cover the jars with lids and roll them with a key.
- Put the cans in a convenient place, previously covering them with a towel or other material, “wrap” the cans and leave to cool completely.
How to sterilize jars
Banks can be sterilized in several ways:
- Wash the cans, place them on a baking sheet and place in a cold oven. Turn on the oven 110 degrees and leave the jars for 20 minutes. Turn off the oven and let the banks cool for a few minutes. Then, gently remove the jars with a dry towel.
- Fill the jars approximately 2 cm with water and place them in the microwave. Turn on the microwave at maximum power, set the timer for 3-5 minutes. Water in the banks should boil, and the walls should be covered with drops. After that, pour the water from the cans and place them to dry on a dry towel with the neck down.
- Put the jars in a deep pan, pour cold water so that it completely covers them. Wait until the water boils, then boil another 15 minutes. Carefully remove the cans, place on a dry towel with the neck down until it dries completely.

In the video you will see how thick you get lecho, and you can also see how lecho looks already in rolled up banks.
