Step cooking
- Tomatoes (2 kg) are thoroughly washed, cut into medium sized pieces, removing the middle, and passed through a meat grinder (you can do this directly with the peel).
- Shredded tomatoes are placed in a large metal container.
- To them add 1 cup of sugar, 1 cup of vegetable oil and 2 tbsp. l salt. We put the container on a slow fire and periodically stir its contents so that the salt and sugar dissolve.
- Peppers (3 kg) are washed and cleaned of seeds. Then cut it into medium sized slices.
- Add chopped pepper to the tomatoes and gently mix everything with a spatula.
- At this time, we prepare jars: wash them thoroughly and put them in a cold oven. We set the oven to a temperature of 130 degrees and after it has warmed, keep the jars inside for 5 to 7 minutes. We also place the lids in a deep container and fill with “cool” boiling water (we keep them in boiling water for 7-10 minutes).
- After our vegetable mixture boils, keep it on fire for about 15 to 20 minutes, stirring occasionally (pepper should “reach” half-cooked and not boil into porridge).
- After a specified period of time, turn off the fire under a container of vegetables and pour our lecho on sterilized jars using a ladle.
- Banks with lecho tightly close the lids and turn upside down.
- Cover them with a towel and leave for 2 to 3 hours.
- Then we return the cans to their normal position (with the lid up), allow them to cool completely and put them away for storage.
With the indicated amount of ingredients, you will get about 5 liters of lecho.
Decoration and serving
When serving, lecho can be decorated with chopped fresh herbs or freshly ground black pepper. Since there is no vinegar in this vegetable sauce, it can not only be served as a snack, but also used in the preparation of soups, stews, etc.
