Step cooking
- We put the frozen boiled shrimp in a container of suitable size, fill it with cold water and leave it to defrost for a while. Please note that shrimp, like other seafood, should never be defrosted in hot water.
- While the shrimp are thawing, we are preparing the remaining ingredients. Cut the stalk of sweet bell pepper and carefully remove the seeds. Then chop the pepper into thin strips.
- Next, peel the carrots from the skin and first cut at an angle into oblong plates, and then chop into strips.
- The beam is peeled and cut into half rings.
- Cut the chilli stalk and chop it very finely. The amount of pepper may vary depending on your wishes.
- Carefully wash the cilantro and onion greens, dry and chop finely.
- When the shrimp thawed, we drain the excess liquid from them. Then they must be cleaned. If desired, you can buy already peeled shrimp.
- Next, we need to marinate the shrimp a little. Add soy sauce and a little sesame oil to the shrimp bowl. Mix thoroughly and leave for 10-15 minutes.
- While the shrimp is marinated, saute the sesame seeds. To do this, heat a thick-walled pan without oil well, pour sesame seeds on it and lightly brown it, not forgetting to stir. Here you need to be very careful, because the sesame seeds are fried very quickly and can burn very easily. Pour the fried sesame seeds into a separate bowl.
- We put a pan on the stove, pour 1-1.5 liters of water into it and bring to a boil.
- Add salt to boiling water and spread the noodles. Mix thoroughly and cook until tender.
- While the noodles are cooking, put a cast-iron wok pan on the stove, pour vegetable oil into it and warm it very well.
- Throw the finished noodles into a colander, and then rinse with cold water.
- Put the chopped vegetables on the preheated wok and fry for 1-2 minutes, stirring constantly.
- After that, lay the shrimp for the vegetables and warm for another 1 minute, stirring constantly.
- Then pour the cooked noodles onto the wok, again mix thoroughly for 1-2 minutes and pour soy sauce, sesame oil and sprinkle with fried sesame seeds.
- Sprinkle finely chopped cilantro on top, mix everything thoroughly and remove from the stove, as soy sauce burns very quickly too.
- Now it remains only to fry fried eggs. To do this, add a little vegetable oil to the pan and warm it well. We break the eggs according to the number of servings, salt and pepper to taste, and then lightly fry on one side so that the protein is cooked and the yolk remains liquid.
- We lay out the finished noodles in portioned plates and lay the fried eggs on top. After that, sprinkle with finely chopped onion greens and serve. Enjoy your meal.
