Step cooking
Cooking broth
- For a tasty and satisfying lagman, you need to prepare a rich broth from chicken bones and vegetables. From vegetables you will need onions and carrots. We clean and cut them into large pieces.
- It is better to fry vegetables immediately in a pan with a thick bottom, but if you do not have one, you can use a pan. Pour 1 tbsp into the pan. l vegetable oil, heat well and send the vegetables to be fried.
- Next, we need any chicken bones - it can be a wing, a soup set, a bone from the thigh. Add them to the pan and fry with vegetables.
- Fill with 1.5 liters of cold water and cook, covered with a lid, over low heat for 40 - 45 minutes.
Cooking lagman
- Chicken meat - fillet and meat from the thigh, rinse and cut into medium pieces.
- Cut the onion into thin half rings, chop the garlic with a knife.
- In a pan with a thick bottom or pan, heat 1 tbsp. l vegetable oil, add onion and garlic, fry. After a few seconds, add the chopped meat and 20 g of tomato paste, which will add sourness and thicken our soup.
- We clear the bell peppers from the seeds and cut into thin strips, add to the pan.
- Cut the tomatoes into small cubes, send them to the pan to fry.
- We cut celery stalks into thin strips and send to the rest of the ingredients, it will add freshness and an unusual flavor to the dish.
- Fry the vegetables with chicken for a few more minutes and pour in the finished chicken broth, bring to a boil and simmer for 30 minutes. At the end of cooking, salt, pepper to taste, add 0.5 tsp. paprika. You can add other spices that you like.
- Separately, cook until ready spaghetti or homemade noodles, recline in a colander. Boil the noodles in advance so that it does not cloud the broth, and does not boil too much.
- In a bowl for soup, put the noodles and pour hot broth with vegetables. Sprinkle with finely chopped dill, parsley, cilantro and green onions. Lagman with the chicken is ready! Enjoy your meal!
