Lagman Noodles | 400 g |
Step cooking
To start, let's take care of the lagman itself
- Cut into small pieces 600 g of beef.
- We put the cauldron on fire, pour 3 tbsp. l sunflower oil and heat.
- Pour 1 tsp in warmed sunflower oil. zira, 1 tsp Sichuan pepper and let them boil in oil for 15-20 seconds. Add finely chopped beef to the cauldron and, stirring occasionally, fry it for 3 minutes over high heat.
- With 300 g of onion, remove the husk and cut it into half rings, then divide it into quarters, add to the meat, mix and fry for 2 minutes without reducing the heat.
- We peel 150 g of carrots, divide in half, cut in the shape of a semicircle, send to the cauldron, mix and fry over high heat for 2 minutes.
- Wash and peel 300 g of potatoes, then cut it into small pieces, put it in a cauldron and fry for 3 minutes over medium heat.
- We wash 240 g of eggplant, cut the stalk and cut into cubes.
- We wash the tomato 400 g, divide into halves, cut the stalks and cut into small cubes.
- Add to the cauldron 1-1.5 tsp. salt and mix. Pour tomatoes, 100 g of string beans and eggplant cubes into meat with vegetables, add 2 tbsp. l Tomato paste, mix well and simmer over low heat for 5 minutes. We rinse with 150 g of red and yellow sweet pepper, remove the core with all the seeds and cut into medium sized pieces.
- We wash 150 g of celery stalk and cut it into circles. Take 10 g of garlic, flatten it with a wide side surface of the knife, and then finely chop. Mix our meat with vegetables, add red and yellow peppers, celery, 5 g of garlic, fall asleep 1 tsp. coriander, 1 tsp sweet paprika, 0.5 tsp ground black pepper, throw 2 pods of small chili peppers and mix well again. We extinguish it all over low heat for 2 minutes. Pour 1 liter of water, bring to a boil, mix again with a spatula, cover with a lid and leave to boil over low heat for 30 minutes.
While the meat is stewed with vegetables, let's cook noodles
- Pour 2 liters of water into the pan, put on a big fire and wait for it to boil. Add 1-1.5 tsp. salt, add 400 g of noodles, stir with a wooden spoon and cook, following the instructions on the package.
- Wash and finely chop 20 g of fresh green cilantro. Turn off the lagman, add 5 g of garlic, 20 g of green cilantro, mix and remove the cauldron from the stove. Put the finished noodles in a deep plate, pour lagman on top and serve.
Important! Before adding eggplant to the cauldron, it is better to remove the bitterness known to everyone.To do this, cut it in cubes in advance, then sprinkle them with salt and leave for 15-20 minutes, then rinse thoroughly under cold water.
This version of the lagman is very aromatic, with a rich taste and satisfying.
