Ingredients
- eggplant - 2.5 kg
- parsley root - 180 g
- carrots - 1 kg
- garlic - 235 g
- onions - 500 g
- bell pepper - 350 g
- celery - bunch
- parsley - a bunch
- vegetable oil - 150 ml
- water - 1 l
- salt - 1.5 tbsp. l
Step cooking
- We take 2.5 kg of eggplant, cut off their ends and pierce the vegetable with a toothpick in several places.
- Immerse the eggplant in boiling water for 15 minutes.
- In each eggplant we make a small incision with a knife, forming a "pocket".
- On a coarse grater, rub 180 g of parsley root and 1 kg of carrots.
- Cut into small strips 350 g of bell pepper.
- Dice 500 g of onions.
- Pour 150 ml of vegetable oil into a heated frying pan and pass the onions on it.
- Add parsley root and carrots to the onion.
- We stew the vegetables until half ready and at the end we send the pepper to them. Cooking is still 4 minutes.
- Finely chop a bunch of parsley and add it to the pan.
- There we squeeze through a press of 200 g of garlic.
- Add 1 tsp to the ingredients. salt and mix well.
- We wash a bunch of celery stalks and put some of them to the bottom of a deep refractory pan.
- Add 30 g of chopped garlic to celery.
- We put in the eggplant vegetable filling, dress them with a thread and put them in a pan, alternating with celery stalks.
- Pour 1 liter of warm water into a deep container, add 1 tbsp. l salt and mix everything until completely dissolved.
- Pour the finished marinade into the pan with eggplant.
- We cover the eggplant with a plate, put a bottle of water on it and leave the vegetables in this state for 5-6 days.
Sour eggplant stuffed with carrots is a delicious, fragrant and juicy vegetable snack. Such a dish is perfect as a side dish for potatoes, meat or cereals. Although cooking will take some time, the result will surely meet all your expectations.
