Ingredients
- white cabbage - 3-3.5 kg
- apple - 1-2 pcs.
- carrots - 2 pcs.
- honey - 2-3 tbsp. l
- salt - 2 tbsp. l
- allspice peas - 12-15 pcs.
- bay leaf - 2-3 pcs.
Step cooking
- To start, prepare the cabbage. Choose late enough mature heads of cabbage with dense leaves. Rinse approximately 3-3.5 kg of cabbage thoroughly under cold running water and remove the upper damaged leaves as necessary. Cut the cabbage in half and chop it with a special grater. If you don’t have such a grater, then chop the cabbage into small strips with a knife. Place chopped cabbage in a deep bowl.
- Apples for sauerkraut are best taken with sweet and sour varieties. Rinse about 1-2 apples, depending on size, under running water, then cut them in half and remove the seed core. Then cut the apples into thin slices and place them in a bowl of cabbage.
- Peel 2 small carrots and rinse them well under running water, then grate Korean style on the carrot grater. Add chopped carrots in a bowl to the rest of the ingredients. Optionally, you can use more carrots.
- Add 2 tbsp to the bowl. l salt, 2-3 bay leaves, as well as about 12-15 peas of allspice. Then pour all about 2 tbsp. l honey and mix everything well with your hands so that the ingredients are evenly distributed among themselves. Try the cabbage to taste and, if necessary, add salt.
- Leave the cabbage to infuse in a bowl for about 30 minutes.
- After 30 minutes, transfer the cabbage to a clean jar, and on top of the cabbage itself, put the appropriate oppression and slightly press down. Cover the jar and leave at room temperature for 3 days. At the same time, make punctures in cabbage every day to release excess air. Instead of a can, you can use a bowl or other suitable container for sauerkraut.
- After the allotted 3 days, sauerkraut is ready. It turns out very crispy and juicy. Place the cabbage in the refrigerator for future storage. When serving, you can add onions to the cabbage and pour everything with vegetable oil.
