Ingredients
- couscous - 250 g
- water - 350 ml
- onions - 1 pc.
- carrots - 1 pc.
- yellow bell pepper - 1/2 pcs.
- red pepper - 1/2 pc.
- green pepper - 1/2 pc.
- eggplant - 1/2 pc.
- vegetable oil - 3 tbsp. l
- dried garlic to taste
- ground black pepper to taste
- salt - a pinch
Step cooking
- Finely chop 1 head of onion and fry it in a pan with the addition of 3 tbsp. l vegetable oil.
- Cut 1 carrot into a small cube. Add it to the onion and continue to fry the vegetables over low heat.
- Also cut into cubes 1/2 red, green and yellow bell pepper. We send the chopped vegetables to the pan.
- Add 1/2 eggplant to the rest of the ingredients, cutting it into small cubes.
- Mix vegetables, add a pinch of salt, dried garlic and black pepper to taste to them.
- Pour 250 g of couscous into the pan and pour 250 ml of boiling water over it.
- We cover the pan with a lid and cook the dish for 5 minutes.
The finished couscous is soaked in vegetable juice, which makes it incredibly tasty and aromatic. This dish will be the perfect option for a light lunch or even dinner. At the same time, it can also be used by vegetarians and fasting people.
