Chicken Hearts 1 kg
Sour cream 200 g
Flour 1 tbsp. l
Garlic 2 cloves
Onion 2 pcs.
Parsley and dill ½ beam
Dijon mustard 2 tsp
Hard cheese 100 g
Vegetable oil 3 tbsp. l

Important!To choose the right hearts, you need to pay attention to several points: they should only be chilled, not frozen; in structure - smooth, elastic and dense, and in color - dark red, almost burgundy. Bluish tint, yellow spots, white plaque and friability are not allowed.

  1. We’ll rinse 1 kg of chicken hearts and with the help of a knife or culinary scissors, we will clear the films, fat, white vessels and possible blood clots.
    We wash the chicken hearts, get rid of the veins and blood clots.
  2. Peel the onion and garlic and chop: chop the onion into thin rings, and let the garlic pass through the press.

  5. Reduce the heat to a minimum and add boiling water to the pan so that it covers the hearts. Stir the resulting gravy and add salt and pepper, if necessary.

  6. Stew the hearts under the lid for about 1 hour, during which time they are almost completely cooked.
    Leave the hearts to stew under the lid.
  7. Add grated cheese and chopped greens to the pan. Stir the gravy and simmer the dish for another 2-3 minutes until the cheese is dissolved.
    Almost at the very end we add cheese grated on a fine grater into the dish, mix.
  8. We serve the finished dish hot, with any porridge, vegetables, pasta or other side dish to your taste.
