Step cooking
- In a small deep container we crumble 15 grams of pressed yeast and pour 120 grams of warm milk. Add 15 grams of granulated sugar and 15 grams of wheat flour. Mix these ingredients well together, cover the container with cling film and leave in a warm place for 15 minutes.
- In a bowl of a mixer we place 120 grams of granulated sugar and 100 grams of soft butter. Thoroughly mix these ingredients together.
- Add two chicken eggs and two yolks. Beat the contents of the bowl again until smooth.
- Then add the suitable sponge and 30 grams of vanilla sugar. Gently mix everything until smooth.
- Sift 450 grams of wheat flour through a sieve, add 2 grams of salt to it and mix.
- In parts we introduce flour into the bowl of the mixer and begin to knead the dough. Wash one whole orange thoroughly and rub the zest with it. Add the zest to the dough and continue to knead.
- We cover the finished dough with cling film and place in a warm place for 1.5-2 hours.
- Pour boiling water over 100 grams of raisins and leave for 10 minutes. Then the raisins are thoroughly washed and dried from the liquid. Sprinkle lightly with 10 grams of powdered sugar and add 100 grams of candied fruit.
- We mix raisins with candied fruit in the dough that has come up so that they are well distributed throughout the future Easter cake.
- We prepare a suitable cake pan for baking. Lubricate it with butter, if necessary, and cover it with parchment paper. In this case, everything will depend on the material of which the form itself is made. Place the dough in a baking dish and level it. We cover the dough with cling film and let stand for another hour.
- Preheat the oven to 190 degrees Celsius and set the cake for 10 minutes. After 10 minutes, reduce the temperature to 160 degrees Celsius and bake another 80-90 minutes. When the cake is ready, take it out of the oven and leave to cool completely.
- In 140 grams of powdered sugar, add a little 45 grams of orange juice. We do this very carefully and slowly so that the glaze is not lumpy and very liquid.
- Add 15 grams of melted butter and mix the icing.
- We cover it with the cooled cake, decorate it to taste and serve it on the table.
