Step cooking
- In a large, deep bowl, mix 70 grams of pressed live yeast and 400 grams of warm milk. Stir this mixture until the yeast is completely dissolved.
- Sift with a sieve 700 grams of wheat flour and add to the yeast. Mix well, cover with cling film and clean in a warm place for 40-50 minutes.
- Separate 8 yolks from the proteins and place them in a large deep container.
- Add 300-350 grams of granulated sugar to the yolks and beat with a mixer until smooth. Next, add 4 grams of vanillin, 4 grams of salt and 15 grams of cognac. Mix the whole mixture.
- We put 250 grams of soft butter in a common bowl and again we mix well. Sift another 700 grams of wheat flour and add it to the rest of the ingredients. Knead a homogeneous dough.
- We put a non-stick frying pan on the stove and put 100 grams of walnuts on it. Fry for 2-3 minutes without adding oil. When the nuts are browned and cooled, cut them into small pieces and add to the dough. Mix all the ingredients.
- Add the dough to the dough and knead for at least ten minutes. When the dough is thoroughly mixed, cover it with cling film and place in a warm place for at least half an hour. We knead the dough, again cover with cling film and leave for 50 minutes.
- When the necessary time has passed, crush the dough again, cover with cling film and leave to raise for 50 minutes for the third time. After 50 minutes, crush the dough again and begin to prepare the baking dish. Lubricate special paper molds for baking Easter cakes with melted butter.
- We tear off a small piece from the whole dough and roll it into a ball. Put this ball in shape. So do with the whole test. The test in the form should be 1/3 of the part. Leave the dough to rise in the forms for half an hour.
- Preheat the oven to 180 degrees Celsius, put all our forms on a baking sheet and place in the oven. Bake for 25 minutes. When the cakes are ready, remove the pan from the oven and leave to cool.
- In the meantime, cook the icing. To do this, put three egg whites and 150 grams of powdered sugar in a mixer bowl. Beat with a mixer for five minutes about the formation of lush white foam. Add 15 grams of lemon juice to the icing and continue whisking for another three minutes.
- We cover all cakes with glaze, decorate to taste.
