Step cooking
- To prepare the Easter cake, choose dried fruits to your taste - raisins, dried apricots and any others. Pour 80 g of dried fruits into a glass and fill them with 1 tbsp. l brandy and while you cook, shake the glass periodically. If you do not want to use cognac, just soak dried fruits in boiled water. You can also use candied fruits and nuts of your choice for filling. Turn on the oven to warm to 175 ºС and pre-soften 125 g of butter at room temperature. Sift 350 g of wheat flour into a deep bowl and add 0.5 tsp to it. salt and 2 tsp. baking powder. Then pour 0.5 tsp into a bowl. cardamom and 1 tsp vanilla sugar. Mix well with a spoon.
- In a separate deep bowl, separate 4 squirrels from the yolks. You will need yolks too. Add a small pinch of salt to the proteins and beat them with a mixer in a good lush mass - first at a slow speed and then at maximum speed.
- Separate another yolk in a bowl with yolks, they should be 5. Add 150 g of sugar to the yolks and immediately beat well with a mixer until lush, so that the yolks lighten. Gradually add softened butter to the yolks, whisking the mass all the time until smooth.
- In dried fruits, add 1 tbsp. l flour and mix well so that they are evenly distributed in the dough. Then pour the dried fruits to the yolks with oil and mix well with a spoon.
- About a third of the flour is added to the bowl with the yolks and mix well, then pour 150 ml of milk and also stir until smooth. To the resulting mass, gradually add the remaining flour, constantly stirring with a spoon. Then gradually add the protein mass and mix well until smooth. Since the dough is not yeast, you do not need to knead it for a long time.
- You may need two small forms for such an amount of dough with a diameter of 13 cm or one large one. Put the finished dough evenly into the mold and set the cake to be baked for about 40-60 minutes, depending on your oven. To prevent the Easter cake, don’t open the oven for at least the first half hour, and then you can check the readiness of baking with a wooden toothpick.
- When ready, transfer the Easter cake to the dish. It should turn out magnificent and rosy autumn. When it cools down, decorate the Easter cake to your liking. You can sprinkle it with icing sugar, pour it with protein or chocolate glaze, sprinkle with confectionery sprinkles, nuts, coconut flakes, put decorations from mastic - as your imagination wishes.
