Step cooking
- We heat 1 liter of milk to 40 degrees. We send yeast into deep dishes. It can be 100 g fresh or 35 g dry. If you take fresh, it is very important that they are really very fresh, the final result depends on it. We will cook with fresh yeast. Grind them in a bowl, in small portions, 1 tbsp. l add the heated milk. When the yeast dissolves well, transfer them to the whole milk and mix. Use a silicone or wooden spatula to knead the dough.
- Add 700 g of sifted flour, mix well. We get a mass that is thicker than the dough for pancakes. Cover with a lid or towel and leave in a warm place for half an hour, so that the mass rises. Stir the mass after this time, and leave for another 15 minutes to come up a second time. While the dough rises, knead the remaining ingredients for the dough.
- Drive 5 eggs into a deep bowl and beat them to a thick foam. Add in small portions 4 cups of sugar.
- Pre-melt in a microwave or water bath 250 g of margarine, let it cool to a temperature of 40 degrees and pour into a thick egg mass. Add 500 g of 20% sour cream, mix until smooth. The resulting mixture is poured into a dough and gently mix in one direction.
- Pre-rinse 500 g of raisins, fill with water, let swell. Then put it on a paper towel, let it dry. We send raisins to the dough, mix.
- Then sift 1.5-2 kg of flour and add to the dough. Knead with a spoon in one direction until a homogeneous mass is obtained. If you add flour 1.5 kg, then the finished cakes are wet. Easter cakes are made more dense if the dough is kneaded on 2 kg of flour.
- Add 3 tbsp. l vegetable oil and mix the dough until it has absorbed all the oil. Then we cover the dough with a lid and leave it to rise for 20 minutes. During this time, you can prepare baking dishes.
- Now turn on the oven to heat up to 200 degrees. We spread the dough into forms, fill them in half. We send cakes to the oven, set the temperature to 150-160 degrees, bake 40-50 minutes.
- While baking cakes, we make sweet icing. Three egg whites are sent to a deep bowl and whipped into a foam using a mixer. Then gradually add 200 g of sugar and beat for 10 minutes until thick peaks.
- We get ready-made Easter cakes from the mold, let it cool completely. Lubricate the top with glaze and sprinkle with colored powder. After that, we can serve.
