Step cooking
- Cut into portions 1-1.2 kg of rabbit meat. Rinse the meat properly, dry it on a paper towel. If the rabbit is not too young, it is better to pre-soak the meat in water for 2-3 hours. Put the prepared pieces in a bowl or deep plate.
- Peel one large onion and cut it into small half rings. Their thickness should be about 3-5 mm.
- Add salt to the rabbit to taste. Pour in a mixture of ground peppers, a tablespoon of Italian herbs or seasoning for meat.
- Pour the onion into a rabbit bowl. Add 220-240 g of mayonnaise or sour cream there and mix well. Make sure that the spices are evenly distributed, and mayonnaise (sour cream) completely covered pieces of meat. It is more convenient to mix with hands. Cover the bowl with cling film and leave it to marinate for at least two hours. The bowl can be refrigerated or left on the kitchen table.
- While the rabbit is pickled, you can do potato garnish. Peel 0.5 kg of potatoes. Rinse, dry on a paper towel.
- Cut the potatoes into a large cube. Small and medium tubers can be divided into four parts. Keep the pieces the same size. Salt the potatoes, pour 1.5-2 teaspoons of ground paprika or spices for potatoes into it. Pour 75 g of vegetable oil and mix well.
- Fill a baking sheet with foil or prepare a glass baking dish. Preheat the oven to 180 degrees.
- Remove the film from the bowl in which the meat is pickled. Stir it thoroughly again. Gently lay the pieces of rabbit together with the onion in a mold or on a baking sheet. Try to spread onion half rings on top of the meat. If there are gaps between the pieces - it's okay, you can put the potatoes in them.
- Place the pieces of potato between the rabbit meat or on top of the meat.
- Tightly cover the top of the mold or baking sheet with foil. Carefully squeeze the edges of the foil so that the meat is completely stewed. Put the dish in the oven and bake for about an hour.
- After an hour, remove the foil and put the mold in the oven again so that the meat and potatoes are browned. This will take about 30 minutes. Check the readiness of the meat: when piercing, clear juice should stand out. Remove the finished dish from the oven, cool for 15-20 minutes and serve in the dishes in which it was baked.
