Preparation of raw materials and ingredients
- A rabbit (2-2.5 kg) must be soaked in cold water to remove blood residues during the day, periodically changing the water. To eliminate the odor in the water, you can add vinegar, at the rate of 10 ml per 1 liter of water.
- In a dried carcass, cut out the entire liver (heart, liver, kidneys, lungs). Divide the rabbit into small portions. Rinse well again under running water.
- To tender the flesh and improve the taste, the meat must be marinated. Pieces of rabbit meat should be placed in a ceramic or glass dish, salt (at the rate of: 20 g of salt per 1 kg of meat), pepper, add sour cream (300 g). Rabbit meat has a sweet taste, so you do not need to add sugar.
- In a container, pieces of meat thoroughly roll in sour cream and leave to marinate in the refrigerator for 3-5 hours.
- Peel the head of garlic. Cut the cloves into slices and add to the pickled meat, mix well. Place the mixture of meat, sour cream and seasonings in the baking sleeve. Fix both edges of the sleeve, make several holes on the upper side of the film to evaporate excess moisture.
Baking
- Move the sleeve with the rabbit rabbit into a mold and put in a bake oven preheated to 200 ° C for 60-80 minutes.
- The baking time depends on the size of the slices and the softness of the meat. At the end of baking, the sleeve can be cut from above, gently unfold the film to the sides so that the rabbit is beautifully browned.
- Remove well-baked and browned meat from the oven, carefully release from the sleeve and place with the juice on a deep plate.

- For a festive table, this sour cream delicacy can be served with a complex side dish, that is, a bit of everything: a slide of mashed potatoes, a slice of carrots stewed with spices, green peas stewed with butter, a hill of mushrooms fried with garlic.
- You can serve fresh salads from cucumbers, bell peppers, tomatoes, add pieces of cheese and small crackers made of white bread to this dish.
- For each day, serve a piece of rabbit with a side dish, pour meat juice.
- Side dishes - rice, wheat, buckwheat or barley porridge, boiled pasta, boiled potatoes or mashed potatoes, boiled beans.
- This dietary meat goes well with braised cabbage, cauliflower, Brussels sprouts or broccoli.
