The recipe describes the baking of a whole rabbit carcass in the oven with a side dish of vegetables and fruits. Due to the high cost of rabbit meat, the dish is more suitable for a festive table.
- Wash the rabbit carcass (1 pc.). Trim fat.
- Salt and sprinkle with red paprika on both sides (to taste).
- Wash fruits and greens. Cut into medium slices medium ripe peach (1 pc.), Plums (3 pc.). Rings cut the quince fruit (1 pc.). Stir the sliced fruit. Foil the baking tray.

- Open a can of red canned beans (1 pc.) And a can of white canned beans (1 pc.). Drain, put the beans in a deep bowl.
- Peel the onion (2 pcs.), Cut one onion into half rings, the second into small cubes. Put the diced onion in a bowl with beans, salt to taste, sprinkle with paprika (to taste), mix.
- Finely chop a third of a bunch of basil and dill (a small bunch), put in a bowl to the beans, stir. Wash the bell pepper (1 pc.), Remove the middle with the grains, the stalk. Cut the pepper in half, cut each half into strips, not reaching the top of the pepper (it turns out a fan).
- Remove the pan from the oven, remove the top foil. Reduce the temperature to 160 ° C, return the meat to the oven to make it brown.
- After 10-15 minutes, remove the dish from the oven. Remove the bottom sheet of foil from under the meat, drain the juice formed during frying on the fruit inside the carcass.
- Peel the garlic (2 cloves), squeeze in a bowl to the beans, mix.
- Spread sliced champignons around the carcass (at a distance of 5-4-6 cm).
- Lay the seasoned beans between the meat and the mushrooms. On a bean layer, nicely lay the onion half rings. Cut a few twigs of basil, sprinkle on top of the dish.
- Cut into rings the pre-washed tomato (1 pc.). Rings of tomato cover meat and fruit. On the right and left sides of the rabbit, lay a fan of bell pepper. Pour red semisweet wine (250 ml) into a baking sheet.
- Cover everything on top with 2-3 sheets of foil, making a lid for the dish from it. Place the dish in the oven, lowering the temperature to 140 ° C for 35-40 minutes.
