Ingredients
- Pumpkin - 600 g
- Cream 10% - 200 ml
- Vegetable oil - 5 tbsp. l
- Onions - 1 pc.
- Garlic - 2 cloves
- Carrots - 1 pc.
- Water - 500 ml
- Salt to taste
- Ground black pepper to taste
- Coriander to taste
- Parsley - a small bunch
- White loaf (crackers) - 300 g (200 g)
Step cooking
Vegetable preparation
- Pumpkin needs to be washed and cleaned of seeds. You will need 600 g of peeled pumpkin.
- Peel the pumpkin with a knife or vegetable scraper.
- Cut the flesh of the pumpkin into large cubes and transfer it to a separate bowl.
- Peel 1 onion and cut into small cubes.
- Take 1 carrot, peel it and rinse. Cut carrots into rings or cubes.
Roasting crackers
- In this recipe, you can use 200 g of purchased crackers, but homemade crackers are much tastier and more flavorful than store crackers. For their preparation you will need 300 g of white loaf. Cut the loaf into cubes, cutting off the hard crusts.
- Cover the baking sheet with parchment paper and transfer the bread blank there.
- Croutons need to be salt and pepper to taste, you can add your favorite spices and be sure to sprinkle 2-3 tbsp. l vegetable oil.
- Thoroughly mix crackers to distribute salt and spices.
- Place the crackers in an oven preheated to 150 ºС and brown until golden brown.
Cooking soup
- In a saucepan suitable for frying, pour 2 tbsp. l vegetable oil and heat. Pour the chopped onions into the heated oil and fry for 1-2 minutes.
- Then add the carrots to the pan and mix.
- Cover the pan and simmer the vegetables until soft for several minutes.
- Peel 2 cloves of garlic and chop into large cubes.
- Rinse a small bunch of fresh parsley, and dry it. Chop the parsley randomly with a knife.
- Add chopped garlic and pumpkin cubes to the vegetable pan and mix.
- Boil 500 ml of water in advance and pour hot water into a pot of vegetables.
- Cover vegetables and simmer for about 10 minutes until soft.
- We check the vegetables for softness and, when ready, add chopped parsley.
- Salt and pepper to taste, add coriander, mix.
- Beat the soup with a hand blender until creamy.
- In the soup, add 200 ml of 10 percent cream and mix thoroughly.
- Bring the cream soup to a boil and try on salt. Add if necessary.
And now your pumpkin cream soup with vegetables is ready. Serve it in deep bowls or bowls, garnishing with chopped herbs and sprinkled with crackers. Enjoy your meal!
