- To prepare pumpkin cream soup, you must first cook a strong broth for the base. Use chicken wings for him. You can, of course, and chicken, but the wings will cook faster and cheaper. Put the pan on the fire, let the water heat.
- Meanwhile, peel the onion, wash under running water. Then peel one carrot, wash, cut into large pieces.
- Cut the onion into four parts, without cutting to the end.
- When the water heats well, send the pre-washed wings there, let it boil. You need to buy meat in supermarkets you have checked, pay attention to the freshness of the product.
- Now collect the top foam from the broth, put the chopped carrots and onions, bay leaf, after it boils, reduce the heat and let the meat cook. Add coarsely chopped celery and a clove of garlic to the boiling broth.
- Cut the pumpkin in half, remove the seeds from it, cut each part into small pieces, so it will be easier to get rid of the hard peel. Buy an orange pumpkin, it is sweet and delicious.
- Cut the carrots into small cubes, the remaining two onions in half rings.
- Pour olive oil into a skillet, heat well, send carrots, pumpkin and onions there, mix, simmer for several minutes to make the pumpkin soft. Extinguishing may take 10-15 minutes.
- The broth should be allowed to boil for about half an hour. Strain the finished broth over a sieve; the wings can be used for another dish. If you get a lot of broth, it will come in handy too, put the extra in the refrigerator.
- Now take a clean pan, send stewed vegetables into it, pour in strained broth: the volume of liquid depends on the density that you want to get for this puree soup.
- Put the pot on the fire and bring to a boil. Let it boil for 5-10 minutes so that moisture is gone, you can remove the lid from the pan.
- Everyone can solve the issue of spices in their own way; bay leaves and ground pepper are enough for this soup. But for lovers of specific food smells, you can add cinnamon, nutmeg, rubbing them on a fine grater. You can add sour cream or cream to such a soup. Do it as you wish, but it is tasty without such an additive.
- After adding spices, let it boil for another minute, remove from heat. Now whisk the soup with a blender until smooth.
- Pour into plates and decorate. You can decorate with pumpkin seeds, vegetable oil, or you can croutons, prepared independently. A good option would be natural croutons "Grenkov", not containing salt, with herbs and garlic.
