Step cooking
- Peel the onion (1 small onion) and cut into arbitrary cubes. Peel and chop the garlic (1-2 cloves).
- Place a pot with a thick bottom on the stove and pour any vegetable oil into it, or rather a mixture of sunflower and olive (1-2 tablespoons).
- Put the chopped onions and garlic in the heated oil and, stirring them with a spatula, bring to a light caramel color.
- When the vegetables are fried, (get a light caramel color), add broccoli cabbage cut into inflorescences (300 grams). Spread the inflorescences with a spatula so that they lie in one layer, adjoining tightly to each other.
- Fill the contents with clean water (200 ml).
- Add a little sugar to enhance the taste of broccoli, salt and black or white ground pepper to taste.
- After boiling, boil the contents of the pan for 2-3 minutes, remove 1-2 broccoli inflorescences to decorate the soup and pour them with ice water so that they do not darken. Kill the remaining contents of the pan with a submersible blender until smooth.
- Pour cream 22% (100-150 ml) into the resulting homogeneous mass. The amount of cream depends on how thick you want the soup. Season with salt and pepper and add spices to taste. It can be cinnamon or nutmeg.
- Put the soup on the stove and bring it to a boil, stirring constantly.
- After boiling, the broccoli cream soup is ready.
Decoration methods and soup serving options
Serve the broccoli cream soup hot, transferring it to deep portioned dishes, and decorate the broccoli inflorescences and homemade crackers that were set aside earlier. Soup can also be garnished with walnuts or almond flakes, a cap of whipped cream, or Parmesan slices. To the soup you can serve fried bacon, boiled meat or fragrant garlic croutons.
