Step cooking
- To begin with, put 350 ml of fat cream in the refrigerator so that they cool well. So the cream will be easier to whip. When the cream of 33% fat is completely cooled, pour them into a deep container. Add 80 grams of powdered sugar to a bowl with cream. Beat cream with powdered sugar until medium peaks at medium mixer speed. The mass should not be too dense, but soft and supple, homogeneous.
- In a separate deep container we place 500 grams of mascarpone cheese. To the cheese we spread 300 grams of orange Kurd, cooked in advance, one tablespoon of orange zest, also cooked earlier.
- Turn on the mixer again, mix these ingredients first at low speed, and then whisk a little at medium speed until smooth.
- When the mascarpone cheese, orange kurd and zest become a homogeneous mixture, they will emit a pleasant smell, add whipped cream with whipped sugar powder to the bowl. We do such additives not immediately, but in three doses, putting a small amount of whipped cream to the cheese and Kurd, and each time we mix the mass with a mixer at high speed.
- After the last addition of cream and whipping, the cream of mascarpone cheese and orange kurd is ready for use. It turns out very delicate, soft, fragrant.
Useful Tips
- Such a wonderful cream can be used to smear cakes, fill cakes, for cakes. It can be used as an independent dish, eat with fruits and berries.
- All components for the preparation of such a cream must be necessarily cold. This also applies to the orange Kurd.
- For cream from mascarpone cheese and orange kurd, cream must be used with no lower than 33 percent fat.
- Instead of orange Kurd, you can use lemon, raspberry, strawberry, any fruit Kurd for cream with mascarpone.
- To prepare an orange kurd, gently rub the peel of the orange on a fine grater, remove only the zest. Using a juicer, we extract natural orange juice. Combine the zest of orange, juice, sugar and butter in a saucepan, bring to a boil. Separately, beaten chicken eggs, add a thin stream into the pan, cook until the consistency of thick sour cream. Let the mass cool completely, after which this orange kurd can be used to make cream with mascarpone for cakes.
