Step cooking
Preparing a cream based on Mascarpone is quite simple and fast. First, spread 250 g of cheese in a deep bowl. If whey comes in the package with Mascarpone, then it is better to remove it. It is extremely important to choose a quality product that does not contain different thickeners, stabilizers and preservatives, because then the cream may not work. Mascarpone should be taken, which contains only pasteurized cream and nothing more.
- In a bowl with Mascarpone, add 50 g of condensed milk. Mix everything well with a mixer until the mass becomes a homogeneous consistency. Do not beat the ingredients for a long time, but only a couple of minutes are enough to break the cheese and mix the products.
- Pour 200 ml of cream into a tall glass or bowl from a blender. Be sure to choose a product with 33-35% fat content, so that the finished cream turns out to be the correct consistency. If you choose less fat cream, the cream will spread and will not keep in shape. Whip the cream with a mixer at maximum speed until they turn into a homogeneous dense mass.
- Add half the whipped cream to the mascarpone dish and mix everything carefully. It is recommended to do this with a spatula, and not with a mixer, because otherwise the cream will exfoliate.
- After the cream becomes more uniform, add the remaining half of the cream and re-mix with a silicone spatula. You can use a mixer. It is required by impulses to stir the total mass, but in no case to whip it.
- If everything is done correctly, then the cream based on Mascarpone turns out to be the perfect consistency. It is tender, tasty and fragrant. The finished cream has a smooth structure, and it is good to make a decor for the cake out of it. The cream is transferred to a pastry bag and used for decoration of various pastries and other desserts. You can also prepare a similar cream with the addition of vanilla sugar, lemon juice and zest, as well as other ingredients that diversify the taste of the finished product and the dessert itself.
