Step cooking
- Pour 250 ml of milk into a small saucepan. In a separate small container, separate two yolks from chicken eggs, add them to milk. Then here we put two tablespoons of starch and 200 grams of boiled condensed milk.
- We turn on the mixer and at medium speed we interrupt the resulting mass until smooth.
- We turn on the stove, put the pan with the broken mixture on the fire, bring to a boil. Do not boil the mass, keep it on fire, stir constantly, so as not to burn. When the first bubbles appear, immediately remove the fire. As a result, we get a custard base of light brown color, having a thick consistency. We set the container with the base aside so that it cools down, while covering it with cling film.
- Now in a separate small container we soak the gelatin: pour 10 grams of gelatin into 50 ml of cold water, remove to the side to dissolve.
- Pour 700 ml of cream of fat into a deep container, add two tablespoons of icing sugar to them, turn on the mixer and whisk the mixture at high speed until splendid.
- When the mass of cream and powdered sugar becomes thick and lush, we add to it immediately the whole custard base prepared earlier. At low speeds with a mixer, simply mix the cream until smooth.
- If we want to get a cream for mousse cake, wafer rolls or custard cakes, add dissolved gelatin to this mixture. Again, mix thoroughly until smooth at a slow speed with a mixer. Cream for wafer rolls is ready.

- Such a cream can be used for mousse cakes, custard cakes.
- You can even out the cakes with this cream, but you won’t be able to decorate it, as it is quite soft.
- This brulee custard can be used as ice cream. In this case, do not add dissolved gelatin to the cream. Simply place the cream in the freezer, spreading it into paper cups. After a certain time, you can eat it like ordinary ice cream.
- When preparing the cream, it is necessary to cool the heavy cream in the refrigerator - it’s much better to whip them, we’ll get the right consistency faster. And they must be a high percentage of fat.
