Step cooking
- We take six fresh chicken eggs, be sure to wash them with warm water and soap under warm running water to avoid salmonella infection. We break the eggs, separate the proteins and yolks separately, place them in two different deep containers.
- Now we take the mixer, we begin to whip the whites first. To make them whisk better, add a quarter teaspoon of salt to them. Turn on the mixer and start whipping six proteins, this process is quite lengthy. At the exit, the proteins acquire a white color and a thick consistency, such that when the container is turned over, the mass does not pour out anywhere.
- Now add six tablespoons of granulated sugar to the yolk container.
- Turn on the mixer again and beat the yolks until they break into foam and the sugar stops crackling.
- When this happens, add half a kilogram of mascarpone cheese to the yolks and mix it into the sweet mass of sugar and egg yolks at a slow mixer speed. When the mixture becomes more uniform, increase the speed of the mixer.
- We spread the resulting mass to whipped proteins, mix.
- Mix proteins and yolks very carefully, fixing the kitchen spoon in one position, rotating it with the same smooth movements, while rotating the bowl with cream with the other hand in a circle. We mix the cream only from the bottom up, very slowly, in order to keep the air in it, then it will turn out very gentle.
- To form tiramisu we use small glass forms.
- We prepare 400 ml of strong coffee with cognac, pour into a wide bowl. We take savoyardi cookies, dip them in coffee with cognac for one second, put them on the bottom of the dessert mold. When all the forms are filled with cookies, spread the cream on top to the top, completely covering the cookies.
- In order for the mass to completely sit on the cookies and the tiramisu surface to level out, it is necessary to shake the filled forms a little, gently hitting them on the surface of the table.
- Sprinkle each portion of tiramisu with grated chocolate, send to the refrigerator for 3-4 hours. After that, you can serve Italian popular dessert on the table.
