Step cooking
- Soak 400 g of red beans in cold water in advance overnight, it will swell and increase in volume. Then drain all the water and rinse the beans under running water.
- Place the beans in a pan and pour fresh cold water on it. For 400 g of beans you will need about 6 glasses of water. Put the pot with beans on a small fire and bring to a boil. Then drain the liquid again and pour fresh cold water in the same proportions. Boil the beans over low heat for about 1 hour without covering the pan with a lid. Also, do not mix the beans during cooking, so that it does not turn into porridge.
- Add to the beans 1 tbsp. l vegetable oil, thus, the beans will become softer. About 5 minutes before cooking, salt the beans to taste.
- While the beans are boiling, prepare onions and herbs. Peel one onion, rinse and cut into thin half rings.
- Rinse parsley thoroughly and chop finely with a knife.
- Pour about 1-2 tablespoons into a deep pan. l vegetable oil and lightly heat it. Then place the chopped onion in a pan and fry it until light golden brown, occasionally stirring with a spatula.
- Drain the beans from the finished beans. When the onion is browned, add 2 tbsp to the pan. l tomato paste, mix it with onions and lightly fry.
- Pour boiled beans to the onion in tomato and mix gently with a spatula. Fry the beans over low heat for several minutes, stirring with a spatula.
- Then add black and red ground pepper to taste to all the ingredients. Spices you can choose at your discretion. In addition to pepper, suneli hops and coriander are well suited.
- Add chopped greens to the beans and stir so that all the ingredients are evenly distributed. Ready beans are very aromatic and tasty.
Red bean prepared in this way is a completely independent dish, but it can also be a good side dish for meat, and an option for hot or cold snacks.
