Step cooking
- In 1.5-2 liters of water, boil 1 medium red beet until cooked. This will take approximately 45-60 minutes of time. The exact cooking time depends on the type of vegetable. Peel 1 medium onion. Chop into small pieces.
- Heat 40-45 ml of vegetable oil in a pan well. Put chopped onions in a pan. Fry with constant stirring until golden brown (about 5-7 minutes).
- Peel boiled beets, grate it on a fine grater. If you want to get an unusual coarse-grained structure of cutlets, grate boiled beets on a medium grater (in this case, you need to add another chicken egg to the recipe).
- In a deep bowl, put 500 grams of mixed pork and ground beef (the ratio of pork to beef is 1: 1). If desired, you can change the proportions from which the stuffing is made. More pork in minced meat makes the patties not only fatter and softer, but also more high-calorie. Add 3 tablespoons of breadcrumbs to minced meat.
- Put the resulting beetroot mass in a bowl to the other ingredients. Beat in a mass of 1 chicken egg. It is better to take a large homemade egg. You can take two small chicken eggs. Put the fried onions in the bowl with the oil left over from the frying. Stir the minced meat well first with a spatula, then with your hand until all the ingredients are evenly distributed. If desired, you can add a few chopped cloves of garlic and herbs (your favorite: Provencal mix, basil, dill, oregano, others).
- Add 3 pinches of salt and 1 pinch of ground pepper mixture, mix the minced meat again. Try salt, if necessary, salt the minced meat again. Knead the minced meat well until a viscous consistency is obtained (it can be beaten away like minced meat cutlet). From the minced meat, with wet hands, form 8-10 cutlets (about the same in weight).
- Fry the patties in a very hot vegetable oil in a pan until crusted on both sides over high heat. After you fry the meatballs, reduce the heat to a small one. Cover the pan, simmer the patties until cooked for another 6-8 minutes.
- Remove the cutlets from the pan onto a serving plate. Garnish the dish with finely chopped dill (3-4 branches). Rinse and dry the greens in advance.
Cutlets can be served as an independent dish, and with various side dishes, for example, mashed potatoes, rice or buckwheat, pasta. The dish is very tender and juicy. It combines meat taste and sweetness of boiled beets, which successfully complement each other.
