Step cooking
- Take 300 g of peeled zander fillet and cut it into medium-sized pieces. If your fish is frozen, it should first be allowed to thaw. If you use a whole carcass of fish for cooking, rinse it thoroughly under running water, cut off the fins and tail, separate the loin portion and clean it.
- Cut the crusts from a third of a loaf of fresh loaf, put the crumb in a small deep bowl and pour about 100 ml of milk of any fat content.
- Peel one large onion and cut into medium slices.
- Remove the bread crumb from the bowl and wring it with your palm to remove any remaining milk. Pass the pieces of pike perch fillet, onion slices and a loaf soaked in milk through a meat grinder, forming minced fish for cutlets.
- Salt the minced meat to taste, and add a pinch of sugar and a few tablespoons of vegetable oil. Next, beat one large chicken egg into the resulting mass.
- Peel one clove of garlic and grate it on the smallest grater.
- On the same fine grater, rub about 20 g of hard Parmesan cheese - this is the secret ingredient that will give your fish cakes an unusual special taste.
- Add the grated cheese and garlic to the minced fish and thoroughly knead all the ingredients. This can be done using a mixer with a nozzle for dough.
- Next, prepare a breading for cutlets. In a separate bowl, mix approximately 5-6 tbsp. l flour and 2-3 tbsp. l turmeric. Thanks to this breading, cutlets will acquire a beautiful golden color instead of a pale fish shade.
- Form small cutlets from the minced meat with your hands, carefully roll them in flour with turmeric. Put the patties in a preheated pan with vegetable oil, fry them on all sides, including on the sides, until a golden crust is obtained. If you doubt that the cutlets are completely fried, bring them to readiness by sending them briefly to the oven.
- Put ready cutlets from pike perch on a plate and serve. This dish is best served with mashed potatoes.
