Step cooking
- We begin to prepare the ingredients. First of all, we wash the pearl barley until the cloudy water disappears, fill it with 600 milliliters of cold water and leave it for 3-6 hours to make the cereal swell and soften.
- Then boil the cereals until cooked, either in a pot or in a slow cooker. Cool the finished cereal and continue to prepare other ingredients.
- Peel and chop the onion. We heat the pan, add vegetable oil and fry the onion until light golden.
- To the onion in the pan add carrots, grated.
- Fry the ingredients so that the vegetables are softer. When everything is ready, slightly cool the onions and carrots to room temperature.
- Peel the potatoes and rub it on a grater. Also peel the garlic.
- We pass through the meat grinder boiled pearl barley, garlic, carrots with onions. Then we add grated potatoes to all these ingredients. Mix all the ingredients well.
- Add salt and ground pepper to taste, mix well.
- We form small cutlets with wet hands and envelop them in breadcrumbs.
- We heat the pan with plenty of oil. Add the patties there and fry them until cooked on both sides.
- We put ready cutlets in a bowl with paper towels so that the towels properly absorb excess oil. Cutlets are ready! Enjoy your meal!
Cooking variations
Barley cutlets are a great option for those who don’t eat meat or are on a diet. These cutlets are not only tasty, but also useful, because they are prepared on the basis of onions, carrots, potatoes, garlic and other healthy products. However, if you do not like or do not eat barley or some other ingredients from the recipe, you can experiment and add your favorite foods to the recipe! For example:
- Barley can be replaced with any other cereal or porridge, for example, buckwheat or wheat.
- Chopped greens, nuts, chickpeas or lentils can be added to cutlets.
- Instead of potatoes, you can add cheese or soy meat.
