Step cooking
- We take 2 large onions and grind in a meat grinder. If desired, you can increase the amount of onion, on average, use 1 large onion per 500 grams of liver. Pour into a large bowl. Take 3 cloves of garlic and chop thoroughly. If there is a small knife and an electric meat grinder, you can also skip through it. If not, do it with an ordinary knife and pour into a bowl of onion.
- We take 1.8 kg of frozen chicken liver and pass through a meat grinder into a large bowl, where onions and garlic are already located. In a bowl with ingredients, break 2 eggs. Add salt to taste in the meat mixture. If desired, add black ground pepper to the meat mixture. Alternatively, you can use a more aromatic mixture of peppers, as well as other suitable spices. Thyme, nutmeg, marjoram, basil, curry or coriander are combined with chicken liver.
- Add about 5-6 tablespoons of flour to the meat mixture. Flour largely determines the initial consistency of cutlets. Therefore, if you like the very tender, you can use 3-4 tablespoons, and if harder, then 7. The ingredients are thoroughly mixed until completely uniform and dissolve the flour.
- We put a frying pan on the fire and pour over vegetable oil. When the frying pan is hot, put the meat mixture on it. It is convenient to do this with a tablespoon, on average, 1.5 for each cutlet.
- Liver cutlets are fried very quickly, literally 1 minute on each side. If you fry for longer, too much “juice” will leave the filling and they will become dry and tasteless.
- Immediately after frying, cutlets can be served. And at this the cooking process comes to an end, bon appetit.
