Step cooking
- For the preparation of buckwheat, you will need 500 g of already boiled buckwheat. To do this, take 200 g of raw buckwheat and bring to readiness in salted water in a ratio of 2: 1. Moreover, it is better to digest the cereals a little - in this state the cutlets will come out juicier.
- Then start cooking minced meat. To do this, you need 200 g of pork (you can use absolutely any part), 2 onions, 4 chicken eggs, 2 tbsp. tablespoons of flour and 2 tbsp. tablespoons of breadcrumbs, also add salt, pepper and bay leaf. On this, the list of ingredients for stuffing is over. You can add your favorite spices to your taste.
- Cut the meat and peeled onions into small pieces and grind them to the state of mincemeat. To do this, use a blender or a meat grinder. Then add eggs, flour, breadcrumbs, as well as spices - a pinch of pepper and salt, bay leaf, and mix thoroughly to the resulting mixture. If you use a ground sheet, then a pinch will be quite enough, if whole leaves - detail the sheet on small particles.
- Transfer the resulting mixture to a small container and mix with boiled buckwheat - the mince is ready for the preparation of meatballs.
- Then proceed to the formation of the Greek. Moisten your hands with water and form an oblong-shaped cutlet from the minced meat.
- To cook in the oven, place the formed patties on a baking sheet covered with parchment. Preheat the oven to 180º. Set to bake for 30 minutes.
Important! After the time has passed, transfer the finished patties into the container and tighten the top with cling film for 10-15 minutes. This will give the patties softness, since when baking in the oven, the top ball of minced meat forms a dry crust. - To cook in a pan, pour vegetable oil onto a heated container, so that the entire bottom of the pan is full, and lay out the formed patties. Fry on both sides until golden brown.
