Step cooking
- Pour red dry beans (300-320 grams) into a pan and pour hot water (500-600 ml). Cover the pan and leave the beans to swell for 1.5-3 hours.
- When the beans become softer (after 1.5-3 hours), put the pan with beans on the fire and cook it until cooked for 40-45 minutes. Optionally, the water in the pan can be changed and boiled already in new water.
- Throw the finished, soft, larger beans into a colander so that the glass has excess water. Let the beans cool and transfer them to the blender bowl. To the beans, add peeled onions (1 piece) and garlic (2-3 cloves), peeled and cut into 4 parts. Also in the blender bowl add a small bunch of fresh parsley or dill and salt (1 teaspoon). Optionally, you can also add your favorite spices and paprika (2 teaspoons).
- Grind the contents of the blender bowl to a homogeneous mass and transfer the resulting bean puree to a deep plate. Gather a portion of the aromatic mass with a tablespoon, and in your hands first form a gingerbread man, and then slightly flatten it. Roll the resulting cutlet abundantly in breadcrumbs, poured for convenience into a small wide bowl, and put on a plate.
- Heat the pan on a stove and pour vegetable oil (5-7 tablespoons) into it.
- Put the formed patties into the heated oil and fry them on each side for about 4 minutes until they are rosy.
- Put the finished lean bean cutlets on a plate. In this way, form and overcook cutlets from the whole bean mass.
Decoration methods and serving options
Serve the prepared lean bean cutlets hot, laying on a serving plate and decorating with fresh green leaves: parsley, dill or arugula and cherry tomatoes cut in half or a fan of fresh cucumbers. It is good to serve various sauces to such bean patties: honey mustard with crushed walnuts, tomato with spicy herbs or lean bechamel with nutmeg and a spoonful of lemon juice.
