Step by step cooking.
- We take 750 grams of beef tenderloin for cooking hamburger patties. Cut the meat into slices across the fibers. Then grind the slices into cubes. Be sure to ensure that the meat is cut across the fibers.
- Fresh fat in the amount of 250 grams is exactly cut into slices, and then chopped into cubes.
- Shredded meat and lard are transferred to a separate container, add to the ingredients an incomplete tablespoon of salt and an incomplete teaspoon of black pepper, mix the ingredients. Mix the components in such a way that the pieces of bacon are evenly distributed throughout the minced meat.
- In order for the minced meat to be saturated with oxygen and become very magnificent, beat it off for one to two minutes.
- We take a serving ring, grease it with a small amount of olive oil. A flat plate, on which we are going to form a hamburger patty, is also greased with olive oil. We put the ring in the center of the plate, put the minced meat in it no higher than the middle of the ring. We press on the meat, level it so that it takes an even shape.
- We take a large piece of cling film, wrap the plate with the ring gently with a film and place in the refrigerator for half an hour.
- After half an hour, we take out a plate with a cutlet in the ring, remove the film, carefully pull out the ring, and put the cutlet on the grill. The principle of frying the cutlet is simple: the grill must be hot, pressing on the cutlet itself should in no case be done. Fry the product, like any steak, for two minutes on one side and on the reverse side.
- If for some reason the degree of frying of the cutlet on the grill does not suit you, place it in a small heat-resistant container and put it in the oven. Bake it for five minutes at a temperature of 180 degrees.
- After that, the cutlet will be ready. It remains to choose the right bun for the hamburger and shape it.
Useful Tips
- To get the perfect filling for a hamburger, you should add ground black pepper to the minced meat immediately, and salt before frying it, as it gives the minced meat a dense texture, and we strive to get a juicy cutlet.
- If you do not have a special burger press or cooking ring, you can use an ordinary plastic bottle or a tin can by cutting out a ring from them.
- Choose a hamburger bun that has no additives that distract from the taste of meat. To prevent the bottom of the roll from becoming wet from dripping juice and fat, fry it in a pan from the inside.
- The basic principle of assembling a hamburger is that the more tender the products, the farther they should be from the hot cutlet, but otherwise experiment yourself.
