Ingredients
- Chicken breast - 1 pc.
- Chicken drumstick, pulp - 2 pcs.
- Chicken egg - 1-2 pcs.
- Hard cheese - 100-120 g
- Milk - 50 ml
- Butter - 40-50 g
- Green dill, parsley, green onion - 40 g
- White bread - 80-85 g
- Breadcrumbs - 100 g
- Seasoning “For chicken” - 1 tsp.
- Salt -2/3 tsp
- Refined vegetable oil -400-500 ml
- Ground black pepper - 1 pinch
Step cooking
- Wash and dry 1 chicken breast and meat from 2 chicken drumsticks cut from the bones (total meat weight about 500 g). Remove fat, tendons and films. Cut the meat into medium sized pieces, choose the size of the pieces so that they easily fit into the receiver of your meat grinder.
- Grind chicken in a meat grinder with a small or medium grate.
- In a deep plate, put 80-85 g (about 4 slices) of white bread or loaf, pour 50 ml of milk in the bread. Squeeze the bread with your hand so that the slices absorb the milk, slightly squeeze the bread flesh from excess moisture.
- Pass the bread pulp through a meat grinder into a bowl with minced chicken meat.
- Add 1 teaspoon of Chicken seasoning to the ingredients bowl or use the spice mix you like. The seasoning used in this recipe includes: dried ground onions, powdered garlic, ground black pepper, ground chili pepper, chopped nutmeg, turmeric powder, sweet red paprika.
- Add 2/3 teaspoon of table salt to the bowl contents, add 1 pinch of ground black pepper (or a mixture of peppers).
- Stir the minced meat well until smooth, with a spoon, hand, or culinary spatula.
- In a deep bowl, put a piece of butter weighing 40-50 g. The butter should be soft, remove it from the refrigerator in advance so that it lies down at room temperature. If you haven’t done this in advance, flood the oil (a little, it should not melt) in the microwave.
- Coarse 100-120 g of hard cheese, take the product to your liking. Spicy cheese will give chopped chicken meatballs piquancy, and a mild flavor will emphasize the tenderness of the dish.
- Transfer the grated cheese into a bowl to the soft butter.
- Chop 40 g of a mixture of dill, parsley and green onion into very small pieces. All greens need to be washed and dried in advance. Transfer the greens into a bowl with the filling, stir the mass well with a fork until all components are distributed over the volume of the mixture.
- Divide the minced meat into portion pieces weighing about 80 g each, roll the blanks into balls (6-7), lay them on a cutting board.
- Divide the cheese filling into pieces according to the number of cutlet blanks (6-7), roll a short oblong sausage from each part.
- Beat 1-2 eggs in a deep plate (the quantity depends on the size of the eggs), shake the yolk with protein with a fork or whisk.
- From each portion of minced meat, make a cake with a diameter of about 8-9 cm, put a sausage from the filling in the center of the workpiece, pinch the edges of the meat cake around the filling, like a pie. Hand smooth the seam, form a cutlet.Do this with all the blanks.
- Roll each cutlet in breadcrumbs (100 g) sprinkled on a wide plate. Then from all sides dip the cutlet in the egg mash, again roll the cutlet in breadcrumbs. Bread all cutlets.
- Strongly heat 400-500 ml of refined vegetable oil in a pan. Deep-fried cutlets from two sides to a beautiful golden crust.
- Put the fried cutlets on a plate covered with paper towels or napkins to remove excess fat.
- Cover the baking dish with a piece of parchment paper, transfer the fried cutlets to the mold, bake in the oven at 160-170 ° C for 10-15 minutes until cooked.
Serve cutlets with different side dishes: mashed potatoes, fried potatoes, cereals, pasta, salads, greens. This version of Kiev cutlets is suitable for both everyday and holiday table.
