Cooking stuffing
- To get started, let's get stuffed. Pour 500 g of cottage cheese into a deep bowl, add 4 eggs, one glass of sugar. If you want a less sweet filling, you can add less sugar as you wish.
- Beat the mass with a submersible blender until smooth, let the sugar dissolve. If you don’t have a hand blender, you can skip the curd through a meat grinder using a fine mesh or grind it through a sieve. Add 1 g of vanillin, continue to whisk. For baking these cheesecakes, we use home-made, fresh cottage cheese from whole milk. You can take any, most importantly, that it was tasty without sourness, you liked the taste and smell. We cover the finished filling with a lid or towel and leave it on demand.
Cooking dough
- Now prepare the dough. In a deep bowl on a coarse grater we rub 200 g of cold butter. Instead of butter, you can use margarine for baking, but with butter the cake is tastier. To make it easy to work with oil, you can roll it in flour, and pour each layer of grated flour so that it does not come in one lump.
- Add to the oil three cups of sifted, white flour of the highest grade, one cup of sugar, half a teaspoon of salt and soda. We rub everything well with our hands to the state of crumbs.
Form and bake a cheesecake
- Rub the baking dish with butter or vegetable oil. We will bake in a round shape with a diameter of 22 cm, you can use any one you like. We fill the bottom of the mold with half the crumbs, we make the sides of it. Tamping the crumb layer is not necessary.
- Pour the filling, sprinkle the remaining crumbs on top, make an even layer. We send to the oven, bake 40 minutes at a temperature of 180 degrees. After that we get it out, let it cool down a bit. With a knife, we separate the sides of the cheesecake from the walls of the mold. If the mold is detachable, open it and get the pastries. If you suddenly can’t get the cake, you can put the mold on a wet towel and let it stand for several minutes. Thus, the bottom of the cake easily lags behind the bottom of the form.
- Cut the cheesecake into portions and serve with your favorite drink. If desired, top with sour cream or jam, or simply garnish with fresh berries.
