- First you need to thoroughly rinse the plums.
- Then we spread them on a towel, after spreading it on a tray or on a table. This is necessary so that the towel absorbs excess water.
- While draining the plums, wash and dry suitable jars and boil the lids. It is also advisable to sterilize the jars in a microwave, oven, or water bath. The washed plums are transferred to clean jars, filling them about one third. Bones from plums do not need to be removed, since when pouring boiling water, the cut plum will instantly lose its shape. Although you need to consider that if you have a plum grade with a thin skin, it will still burst, because it will not withstand such temperatures.
- Next, you need to boil clean water, which we will pour plums. This recipe is based on the double fill method. First, pour the prepared plums in jars with just boiling water, without adding sugar or other ingredients to it. We fill the filled cans with boiled lids in advance and leave them to infuse for a while.
- Next, drain all the water from the cans into the pan. This is most conveniently done using a nylon cap with holes.
- Then proceed to the preparation of the syrup. To do this, we need 250 g of sugar for every 3 liters of syrup. This concentration of sugar allows you to drink compote without diluting it. We put the pan with the drained liquid on the stove, add sugar to it and stir well until the sugar is completely dissolved.
- Next, bring to a boil and let it boil for 1-2 minutes, then immediately pour it back into the jar with plums. You need to pour at the very neck. Then we cover the jar with a lid and roll it using a seaming machine.
- Turn the rolled can upside down. This is necessary so that the lid is additionally sterilized from hot contents and that it can be seen whether the lid is rolled up in good quality. Wrap up rolled cans with a warm blanket or coverlet and leave to cool completely. It is advisable to store such a compote in a dark, cool place. Enjoy your meal.
