Preparatory process
- We sort through 600 g of blackcurrant berries, remove the stalks and leaves, leaving solid whole fruits for spinning that will not lose their shape after contact with boiling water. We thoroughly rinse the currants under cold running water and place in a colander so that the glass is excess liquid.
- We sterilize a 3-liter jar and a lid suitable for our glass containers in the usual way for you.
Compote
- Pour 2.5-2.7 liters of filtered water into a three-liter pot, put on a big fire and wait for it to boil, then turn off the fire. On top of the jar that has not cooled down after sterilization, we put a large watering can and, having picked the berries in a glass, carefully pour them through the watering can into the prepared container.
- Pour berries 300 g of sugar.
- Gently, so as not to spill, pour blackcurrant with sugar 2.5-2.7 liters of boiling water through a watering can, adding hot water to the jar in portions so that the glass does not burst from a sudden temperature drop.
- When the water reaches the upper edge of the glass container, close our jar with a lid and roll it with a key or tighten it tightly. Turn the jar with the lid down to make sure that it is tightly closed. You can also twist it a little in your hands to help sugar dissolve faster in water.
- We turn our rolled-up jar with the compote lid down and place it on a table or any other surface, wrap it with a thick cloth on top and leave it until the compote has completely cooled down.
- You can try the finished drink within a few weeks after preparation, and stewed fruit is stored throughout the winter in the cold or at room temperature.
Important! To diversify the taste and aroma of the drink, cinnamon can be added to the compote. Also, black currant goes well with red currants, gooseberries, cherries and other berries.
