Step cooking
- For this recipe, we need 250 g of peeled squid, these are two carcasses. They can be bought ready-made peeled. But we recommend buying whole squid carcasses and cleaning them yourself. So you are more likely to get fresh, high-quality squid. Cleaning them is quite simple. It is necessary to remove the insides and the skin. To do this as quickly as possible, put the carcasses in hot water for a minute. The skin will curl up and it will be easier for you to remove it. We wash the cleaned carcasses and cut into rings with the thickness of the little finger. Sprinkle them with salt, pepper to taste, sprinkle with lemon juice, mix and leave to soak in the marinade for 10 minutes. For the marinade, you can use any other spices, this is at your discretion.
- During this time we will prepare three bowls. Pour flour into one, and breadcrumbs into the second. Breadcrumbs can be taken classic. We mixed them with sesame seeds and dried garlic.
- In the third we drive in three eggs and mix them. We put a stewpan with a thick bottom on the fire, pour 500 ml of vegetable oil, let it heat. It is very important that there is a large amount of vegetable oil, so that the rings are fried evenly on all sides. If you have a deep fat fryer at home, you can use it. Roll the squid rings in flour, then in the egg and in breadcrumbs.
- We spread it on a flat dish, give it a round shape and leave it for 1-2 minutes, so that they freeze in this form. Then we send the rings to the hot oil and fry for 1 minute 20 seconds, no more. So the squid will remain juicy. We put the finished rings on paper towels, let the excess fat drain.
- Now make the sauce. We wash a small onion, 15 g is enough for us, cut very finely. Take 10 g of green onions and chop finely. We send all the onions into a deep bowl.
- Peel the clove of garlic, rinse, chop finely or pass through the garlic and send to the onion. Add two tablespoons of sour cream. We used homemade, fatty sour cream. You can take a regular high fat store. Add 5 g of American mustard and 5 g of soy sauce, mix.
- Put squid rings on a flat serving dish in a circle, put sauce in the middle and serve. The appetizer is very tasty.
