Step cooking
- Thoroughly rinse and dry 100 grams of fresh cranberries from all the moisture.
- In a deep bowl, put one egg white and 30 grams of lemon juice. Mix everything with a spoon.
- Add 45 grams of potato starch to the protein and mix until a homogeneous mass is formed. Add 60 grams of powdered sugar and again all interfere with complete dissolution.
- Pour 100 grams of cranberries into a bowl and mix gently so that the cranberries are completely covered with a starch mixture. Leave it to lie for three to four minutes.
- Pour the remaining powdered sugar into a large, deep bowl. Using a slotted spoon, we take out the cranberries from the starch in parts and put them in a bowl with powdered sugar.
- We start in a circular motion, without using a spoon or other devices, to mix the contents of the bowl. Thus, the cranberries will remain intact and collect the maximum amount of powder. Cover the baking sheet with parchment paper. Using a sieve, gently sift the excess sugar from the cranberries and put the berries on a baking sheet.
- Preheat the oven to 50 degrees Celsius and set our pan. We insert a wooden spatula into the oven door so that the candies are weathered. Bake cranberries for 30 minutes.
- We transfer the finished cranberries to beautiful candy cans, let cool and serve on the table for tea.
Decoration methods and serving options
- It is not recommended to store the finished berries in a hermetically sealed container, otherwise the cranberries will get wet and the sugar will peel off.
- If you want the berries to be sweeter, then cook the berry syrup and put cranberries in it. Leave it all overnight. If you want the berries to remain acidic, then you do not need to soak them.
- Store cranberries in sugar in a dry place with a cool temperature. Storage time no more than 4 days.
- You can extend the shelf life of candied cranberries by putting it in a cardboard box.
- You can also add some juice to the syrup, such as orange. Then the berries will acquire an interesting aroma and unique taste.
- Cranberries do not have to be fresh. Frozen berry is also ideal. In this case, it must be thawed at room temperature and carefully sorted, choosing beautiful, whole and crumpled berries.
