Ingredients
- Vegetable oil - 1 tsp.
- Wheat flour –60-70 g
- Chicken eggs –2 pcs.
- Cold water –50 ml
- Salt - 1 pinch
Step cooking
- First, take two chicken eggs and separate the yolks from the proteins. Please note that all ingredients for batter should be cold, so eggs should be taken immediately from the refrigerator. Gently break the egg into two halves and, pouring the yolk from one to the other over the bowl or plate, decant the protein into it, and then pour the yolk into a separate bowl.
- Pour 50 ml of cold water into the bowl with the yolks, add a pinch of salt and 1 tsp. vegetable oil. Then lightly beat the eggs with water. To the resulting mixture add 60-70 g of wheat flour (this is about 3 tablespoons). The amount of flour depends on the size of the eggs - the more chicken eggs, the more flour is needed. Mix everything thoroughly. Make sure that no lumps of flour remain in the egg mass.
- Add a little salt to the egg whites and beat with a mixer to the state of lush foam.
- The whipped proteins are added in parts to the yolks and gently mix in a circular motion, trying not to disturb the airiness of the proteins. Further, the batter must be cooled. This batter is perfect for cauliflower, but it can also be used for frying meat and onions. Enjoy your meal.
Secrets of making the perfect batter
- You need to cook the batter as much as the products you plan to fry.
- If the batter is properly cooled before roasting, it will be better to envelop the cabbage, vegetables or meat, and they will remain juicy.
