Step cooking
- Defrost frozen strawberries. Grind strawberries in parts in a blender, but not until porridge. It should be syrup with sliced strawberries.
- The resulting consistency must be laid out in a sieve. Add 100 grams of sugar and mix well. Leave the strawberry mixture to infuse so that the juice stands out. Periodically, it will need to be stirred.
- Now we begin to prepare the basics. To do this, take crackers or cookies, and grind to the state of crumbs. You can grind crackers using a blender, as well as using paper and a rolling pin.
- In a bowl with crushed crackers, add 3 tablespoons of sugar and 3 tablespoons of cocoa powder. Then add 80 grams of melted butter, mix well with a whisk.
- Prepare a baking dish. Lay out parchment paper. Put the finished mixture of crushed crackers, cocoa powder, sugar and butter on paper. It’s good to ram the future cake. Send the cake to the oven, preheated to 180 degrees for 5-8 minutes. Instead of the oven, you can send the cake in the refrigerator for 10-15 minutes. After the oven, the cake should cool, so leave it at room temperature for 20-30 minutes.
- Strawberries in the strainer should release enough juice at this time. Transfer the remaining strawberries from the sieve into a blender and set aside.
- Pour 2-3 tablespoons of strawberry juice into a separate small bowl and add 10 grams of gelatin, mix and leave for 5-7 minutes. The remaining juice is sent to the stewpan and put on the stove, boil the liquid to make a syrup.
- The syrup should darken and boil about 2-3 times. In the same stewpan, you need to add another 50 grams of sugar and mix well until dissolved. The ready-made gelatin should also be sent there, mixing well until a homogeneous consistency is obtained.
- At this time, grind the remaining strawberries in a blender. Then pass the resulting mass through a sieve so that all the fibers and seeds remain in the sieve and do not fall into the cheesecake.
- Put 560 grams of cream cheese in the mixture and mix well with a mixer. Then immediately add the syrup, which could freeze over the entire time and turn into jelly. It can be slightly warmed up on the stove to get a uniform consistency. Mix well with cream cheese and syrup with a mixer.
- If you want to give the filling a more saturated color, you can use a few drops of food color red. The resulting mixture must be poured onto already cooled cake. Send the finished cheesecake to the refrigerator for at least 4 hours, or better at night.
- You can additionally prepare decorations. To do this, melt a half bar of dark chocolate in a water bath and place in a bowl. Wash fresh strawberries and dip each berry half in chocolate.
- Then send the finished berries in chocolate to any surface in the refrigerator, so that the chocolate gradually hardens.
- Prepare whipped cream. You can use purchased, but you can cook them yourself. To do this, you need 33% fat cream and 2 tablespoons of powdered sugar. Whip the cream with a powder mixer.
- While preparing the decorations, remove the cheesecake from the refrigerator and place it in the freezer for 10 minutes. Now you need to get the cheesecake and disconnect it from the form. To improve the appearance, trim the edges, making the cheesecake smooth and neat. Now, if desired, divide the cheesecake into several portions and garnish with whipped cream and chocolate covered strawberries. Delicious dessert is ready!
