Ingredients
- peeled pumpkin - 1 kg
- onions - 2 pcs.
- garlic - 4-5 cloves
- vegetable oil - 2 tbsp. l
- water or broth - 600-700 ml
- cream - 150-200 ml

- ground black pepper - to taste

Step cooking
- First, peel, rinse and dice 2 medium-sized onions. Pour into a pan 2 tbsp. l vegetable oil, heat it over medium heat, then put chopped onions in a pan. Sauté the onion until golden brown over medium heat, stirring occasionally with a spatula.
- Peel 4-5 cloves of garlic, then chop it with a knife on a cutting board. Add chopped garlic to a pan with onions, mix well and sauté for about 1 minute.
- To prepare the soup, you will need 1 kg of peeled pumpkin without peels and seeds. Rinse and cut into small cubes. Then place the chopped pumpkin in a pan to the onion, mix with a spatula and fry for about 2-3 minutes.
- Pour into a pan about 600-700 ml of water or broth at your discretion - meat or vegetable. The liquid should completely cover the pumpkin. Then sprinkle all the ingredients with ground black pepper and salt to taste. Bring the soup to a boil and cook another 15-20 minutes until the pumpkin is ready - it should be soft, but do not digest the pumpkin, otherwise it will lose its taste.
- When ready, turn off the heat and grind all the ingredients in a saucepan to a uniformly dense mass using a hand blender. Pour about 150-200 g of cream into the pan, and if necessary, add more salt and black pepper. Mix well with a spoon so that the cream is evenly distributed. When serving, garnish the soup with a sprig of fresh herbs to taste.
To diversify the classic version of pumpkin soup puree, you can add to your composition your favorite spices and spices - ground coriander, curry, nutmeg, dried basil, rosemary, oregano, etc. For serving, you can pre-cook crackers in a pan or in the oven , with them the soup will be even tastier and more satisfying. Also, when serving, you can sprinkle the soup with grated hard cheese, which will give the dish a delicate creamy aroma and taste.
