Classic Madeleine Cookies - French Recipe

  • silicone mold or any other for baking;

Ingredients

Sugar 130 g
Vanilla sugar 0.5 sachets
Butter 110 g
Flour 120 g
Starch 40 g
Baking powder 1 tsp

Step cooking

  1. Pour 130 g of sugar and half a bag of vanilla sugar into a deep bowl. Instead of vanilla, you can add a small pinch of vanillin.
    In a bowl, combine sugar with vanilla sugar.
  2. Drive the egg into a separate bowl, then pour it into sugar. So repeat with all three eggs. Why drive them into a separate bowl? If suddenly one of the eggs is spoiled, you just throw it away and do not spoil all the other ingredients.
    Add eggs to sugar.
  3. Beat with a mixer the sugar with eggs until lush foam.

  4. In a microwave or steam bath, melt 110 g of butter. Let it cool a little and send to the egg mixture. Instead of butter, you can use margarine. Mix everything with a mixer.
    Enter the pre-melted butter into the egg mass.
  5. Now add 40 g of starch, a teaspoon of baking powder, sift 120 g of flour.
    Add baking powder and flour, as well as starch.
  6. Mix everything with a whisk or a spoon. The result is a batter.
    Gently mix the dough until smooth.
  7. Now move on to baking. I will use a special Madeleine silicone mold, but you can take any other one at your discretion. Pour half a teaspoon of dough into each mold and place it in the oven. Bake at 200 degrees for 7 minutes.
    We spread the dough in special molds for madeleines.
  8. Then we take the cookie out of the mold, let it cool slightly. The decoration will be powdered sugar.
